Hotel Supervisory Programme is designed for individuals who wish to pursue supervisory positions in the hospitality industry. The nature of the course helps to prepare individuals to move into supervisory position. This comprehensive programme covers both theoretical components of hospitality operations, ensuring students are fully equipped with the required operational skills and knowledge to manage hospitality operation effectively.

To provide some supervisory skills in managing the operations of a hotel that evolves around the food service operations, front office operations and housekeeping operations. The supporting activities will aspire the individuals to embark on a supervisory career.

First Day

  • Overview of Food Service Industry, Difference between Commercial and noncommercial food service
    operations (1 hour)
  • Organization charts and the various organizational structures, Steps involved in the management process (1 hours)
  • Marketing in terms of providing guest pleasing service and the elements and importance of feasibility studies, marketing research and marketing plans (1 hour)
  • Concept how a menu dictates operations in a food and beverage establishment and its importance as a marketing tool (2 hours
  • Creating and using standard recipes, Standard food and beverage costs and the main subjective and objective pricing methods (2 hours)
  • Types of service food and beverage operations can provide and concept of providing excellent guest service (1 hour)

Second Day

  • The modern hotel industry and its structure (1 hour)
  • Forecasting and global reservations (2 hours)
  • Managing guest services (1 hour)
  • Arrival, registration, assignment and rooming (1 hour)
  • The role of room rate (1 hour)
  • Billing (1 hour)
  • Night audit (1 hour)

Third Day

  • Role of housekeeping and its relationship with other departments (1 hour)
  • Planning and organizing housekeeping department (2 hours)
  • Housekeeping standards/trends (2 hours)
  • Human resource and training employees in housekeeping (1 hour)
  • Managing inventories and controlling expenses (1 hour)
  • Safety and security (1 hour)

Fourth Day

  • Describe the supervisor’s job (1 hour)
  • Make sound and creative decisions (1 hour)
  • Develop communication skills (1 hour)
  • Develop ways to manage your Time (1 hour)
  • Organize and delegate (1 hour)
  • Discuss productivity and methods improvement (1 hour)
  • Evaluate appraisal and rewards (1 hour)
